Of course a more plausible thesis is that Mohammed did travel across Sinai during his days as a merchant and was well treated at the Monastry. Later on while planning to invade Egypt which he never made a secret and was one of his dreams, this was well known by the Egyptians themselves who tried to passify him by sending him Maria as a gift (later to bear him a child). Therefore to alliviate the fears of the monks to whom he owed a debt of gratitude he SENT that letter. Just another possibility?
